“Sometimes the best restaurants are never noticed, they ebb and flow through the world making connections to the communities they serve, supporting the farmers, the producers and the foodways in their own backyards. They may not have gilded bathrooms and valet parking, but they have veritable authenticity and palpable zeal that shows through everyday. They have values and ethics and a dedicated path to correct a maligned food world. They are the restaurants that I want to support for a better food tomorrow. The Good Food 100 is a list for these restaurants, and it is about time.”
